Ingredients
| Apple Juice | 2 Cup (16 tbs) | |
| One 1 3/4 pound salmon fillet | ||
| Grain mustard | 1/2 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Dill sprig | 4 , finely chopped | |
| Pepper white | 1/8 Teaspoon | |
| Oil | 1 Tablespoon | |
| Several sprigs fresh dill for garnish | ||
Directions
Preheat the oven to 375°F.
Bring the apple juice to a boil in a medium skillet over medium-high heat and boil vigorously until reduced to less than 1/4 cup.
Stir the mustard into the reduced apple juice.
Heat and stir until the mixture is the consistency of the mustard before you added the apple juice.
Remove from the heat.
Stir in the chopped fresh dill.
Lightly grease a medium baking sheet with the oil.
Rub the salmon with the salt and white pepper and place on the baking sheet.
Coat the fillet with the apple juice-mustard mixture.
Bake for 10 to 15 minutes, depending on the thickness of the salmon.
Place on a serving platter, garnish with sprigs of fresh dill
