Salmon Fillet Poached in Vermouth Recipe
Ingredients
| Salmon fillet-1/2 to 3/4 pound | ||
| Garlic | 1 Clove (5gm) | |
| Dry vermouth | 1/2 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| Fresh thyme -3/4 teaspoon, chopped OR dried -1/4 teaspoon | ||
| Salt | 1 To taste | |
| Ground black pepper | 1 To taste | |
Directions
MAKING
1)Wash salmon fillets and cut into 2 portions.
2)Use saucepan for poaching and adding garlic through press.
3)Add vermouth and lemon juice.
4)Chop thyme and add with salt and a grind or two of pepper.
5)Use an enamel or glass pan and place salmon, skin side down.
6)After turning heat to medium cover it and poach, until salmon flakes easily with fork, for 8 to 10 minutes, depending on thickness.
SERVING
7)Remove from poaching liquid with slotted spoon and serve.
