Ingredients

 
2 tbsp. olive oil
 
1 tbsp. minced green onion (white part)
 
3/4 lb. skinned, boned salmon, cut into small cubes
 
3 tbsp. white wine
 
1 tbsp. minced fresh parsley (1 tsp. dry)
 
1/2 tsp. minced fresh thyme (1/4 tsp. dry)
 
2 tbsp. Parmesan cheese
 
1 egg yolk
 
3 tbsp. butter
 
Salt, pepper, and a dash of hot pepper
 
12-16 jumbo pasta shells
 
Sauce
 
2 tbsp. butter
 
2 green onions, chopped
 
1/3 cup vodka
 
12 oz. chopped tomatoes
 
1 cup heavy cream
 
1 tsp. crushed peppercorns (pink if possible)
 
Salt to taste

Directions

Heat in skillet.
Add and stir for 1 minute.
Add and cook until salmon is cooked outside, but pink inside, about 3-5 minutes.
Puree in food processor.
Add and puree just until mixed.
Cool before filling.
Meanwhile, cook pasta.
Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce.Melt in skillet.
Add and cook for 1 minute.
Add and boil approx.1 minute.
Add and simmer until thickened, approx.5-8 minutes.
Fill shells with salmon filling.
Lay in baking pan and pour sauce over.
Cover and bake until hot, approx 25 minutes.
