Salmon Fettuccine Recipe
My passion for Salmon Fettuccine grew during high school days. Made with Pasta, Salmon Fettuccine is a mouth-watering dish. The Salmon Fettuccine holds a high place in the Italian cuisine. Ingredients
3/4 lb. fettuccine
4 tbsp. butter
1 tbsp. olive oil
1 celery stalk, sliced thin
1 carrot, sliced thin
3 cloves crushed garlic
3/4 lb. salmon fillets,skinned, boned, and cut into cubes
1/2 cup white wine (preferably sparkling)
Salt and pepper to taste
1 cup tomato sauce
1/2 cup half and half (light cream)
Directions
Cook in boiling water until firm to the bite (al dente).
Drain and set aside.
Meanwhile, prepare sauce.
Heat in large skillet.
Saute until vegetables become very soft.
Add to vegetables and cook over low heat for approx 3 minutes.
Do not let salmon overcook.
Cover and cook over low heat for approx 5 minutes, until sauce reduces.
Add, cook over low heat for approx 2 minutes.
Add pasta to sauce, mix gently, and serve.
