Salmon Croquettes With Dill Sauce Recipe
Ingredients
| 8-10 ounces wild salmon, diced | ||
| Scallions | 3 , minced | |
| Whole grain bread crumbs | 1/2 Cup (16 tbs) | |
| Egg whites | 2 | |
| Parsley | 2 Tablespoon | |
| Black pepper salt | 1 To taste | |
| Olive oil | 1 Tablespoon | |
| Yogurt | 1/2 Cup (16 tbs) | |
| Dill | 1 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| 1 tsp. prepared stoneground mustard | ||
Directions
Mix diced salmon, scallions, breadcrumbs, egg whites, parsley, sea salt and pepper in a bowl or food processor (if using a food processor, pulse the ingredients but do not puree). Form into patties and fry on medium heat until lightly crisp and browned - about 3-5 minutes on each side. Combine yogurt, mustard, dill and lemon juice. Put a dollop of dill sauce on top of each croquette.
