Ingredients

 8-10 ounces wild salmon, diced
 Scallions3 , minced
 Whole grain bread crumbs1/2 Cup (16 tbs)
 Egg whites2
 Parsley2 Tablespoon
 Black pepper salt1 To taste
 Olive oil1 Tablespoon
 Yogurt1/2 Cup (16 tbs)
 Dill1 Teaspoon
 Lemon juice1 Tablespoon
 1 tsp. prepared stoneground mustard

Directions

Mix diced salmon, scallions, breadcrumbs, egg whites, parsley, sea salt and pepper in a bowl or food processor (if using a food processor, pulse the ingredients but do not puree). Form into patties and fry on medium heat until lightly crisp and browned - about 3-5 minutes on each side. Combine yogurt, mustard, dill and lemon juice. Put a dollop of dill sauce on top of each croquette.
