 18 crepes
 Salmon2 Pound, canned
 Mayonnaise1 Cup (16 tbs)
 1/2 cup relish
 Parsley2 1/2 Tablespoon, chopped
 Scallions2 1/2 Tablespoon, chopped
 Hard-boiled eggs4 , hardboiled
 Salt1 Teaspoon
 Black pepper1/2 Teaspoon

Directions

Make the crepes using the Basic Crepe Batter.
Set aside.
Drain and break up the salmon.
Mix the salmon with the mayonnaise, relish, parsley, scallions, eggs, salt and pepper.
Fill each crepe with some of the salmon filling.
Fold over and place in a buttered shallow baking dish.
Bake in a 350°F (180°C) oven for 20 minutes.
