Salmon Crepes Recipe
Ingredients
| 18 crepes | ||
| Salmon | 2 Pound, canned | |
| Mayonnaise | 1 Cup (16 tbs) | |
| 1/2 cup relish | ||
| Parsley | 2 1/2 Tablespoon, chopped | |
| Scallions | 2 1/2 Tablespoon, chopped | |
| Hard-boiled eggs | 4 , hardboiled | |
| Salt | 1 Teaspoon | |
| Black pepper | 1/2 Teaspoon | |
Directions
Make the crepes using the Basic Crepe Batter.
Set aside.
Drain and break up the salmon.
Mix the salmon with the mayonnaise, relish, parsley, scallions, eggs, salt and pepper.
Fill each crepe with some of the salmon filling.
Fold over and place in a buttered shallow baking dish.
Bake in a 350°F (180°C) oven for 20 minutes.
Set aside.
Drain and break up the salmon.
Mix the salmon with the mayonnaise, relish, parsley, scallions, eggs, salt and pepper.
