Ingredients

 
Red Salmon- 1 can (16 ounce)
 
Cream Cheese- 1 package (8 ounce)
 
Lemon Juice- 1 tablespoon
 
Onion- 2 teaspoons, grated
 
Prepared Horseradish- 1 teaspoon
 
Salt- 1/4 teaspoon
 
Liquid Smoke- 1/4 teaspoon
 
Pecans- 1/2 cup, chopped
 
Parsley- 3 tablespoons, snipped

Directions

MAKING
1) Pour of the liquid from salmon, break in flakes, remove the skin and bones.
2) In a mixer bowl, place together salmon, cream cheese, lemon juice, onion, horseradish, salt, and liquid smoke.
3) Process the salmon mixture until thoroughly mixed.
4) Cover the bowl and chill it for several hours.

FINALIZING
5) In a bowl mix together pecans and parsley.
6) Form the salmon mixture into 1-inch balls and roll in nut and parsley mixture.
7) Cover and refrigerate until chilled well.

SERVING
8) Serve the Salmon Balls chilled garnished with strips of scallions if desired.
