Salmagundi Herring Salad Recipe
Ingredients
| 1 1/2 Bismarck herrings, or 2 jars of Bismarck herring | ||
| 2 cups sliced cold cooked potatoes | ||
| 1 1/2 cups sliced cold cooked beets | ||
| 1/2 cup grated raw carrot | ||
| 1 cup finely diced cold cooked chicken or veal | ||
| 1/2 cup diced raw tart apple | ||
| Sugar | 1/2 Teaspoon | |
| Parsley | 1/4 Cup (16 tbs), chopped | |
| Mayonnaise | 1 1/2 Cup (16 tbs) | |
| Dairy sour cream | ||
| Sliced sweet gherkins | ||
| Hard-cooked eggs | ||
| Cherry tomatoes | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Drain the herring and dice it fine.
Mix with the vegetables, meat, and apple.
Blend in the sugar, parsley, and mayonnaise, and add salt and pepper to taste.
Top with sour cream and garnish with sliced gherkins, dill, and sieved egg yolks.
Surround with tomatoes.
