 Yellow onion1 Large, peeled, finely chopped
 Lean ground beef1 1/2 Pound

 Parsley1 Tablespoon, finely chopped
 Dried thyme1/4 Teaspoon, crumbled
 Salt1 Teaspoon
 Black pepper1/4 Teaspoon
 All purpose flour2 Tablespoon
 Beef broth1 Cup (16 tbs)

Directions

1. Place 2 tablespoons of the butter, the water, and all but 2 tablespoons of the onion in a heavy 10-inch skillet over moderately low heat. Cover and cook for 10 minutes, stirring occasionally to prevent browning.
2. Meanwhile, in a large bowl, combine the beef, garlic, chives, parsley, thyme, salt, pepper, and the reserved 2 tablespoons of onion. Shape the mixture into 6 patties about 1 inch thick.
3. Heat the remaining 2 tablespoons of butter in a heavy 12-inch skillet over moderate heat until bubbly. Add the patties and cook about 4 minutes on each side for medium. Remove the patties to a warm platter and set aside.
4. To make the sauce, stir the flour into the cooked onion in the 10-inch skillet and cook for 1 minute over moderately high heat. Add the beef broth and boil for 4 minutes, stirring, until the sauce has thickened. Place the patties in the skillet to reheat briefly, and spoon the sauce over them. Serve with Glorious Mashed Potatoes.
