For very rich pie pastry 1 1/2 cups flour pinch of salt 6 tablespoons butter 2 tablespoons shortening 1 egg yolk 2 tablespoons cold water For bechamel sauce 1 1/2 cups milk (infused with slice of onion, small bay leaf, 6 peppercorns, blade of mace) 2 tablespoons butter 2 tablespoons flour salt and pepper 3 tablespoons heavy cream For filling 3 eggs 1 cup grated Gruyere cheese pinch of nutmeg salt and pepper 9—10 inch flan ring, or quiche pan
Directions
Method Make pastry dough and chill; line flan ring.
Make bechamel sauce adding cream to it.
When cool, beat in eggs, grated cheese and nutmeg with plenty of salt and pepper.
Pour mixture into uncooked flan shell and bake in a moderately hot oven (375°F) for 25 min- utes, or until set and brown.
