Salami Summer Sausage Recipe

Thanks to my neighbor for sharing this excellent salami summer sausage recipe. Beef is the main ingredient in this salami summer sausage. Trust me when I say, you have to try salami summer sausage.

Ingredients

 
2 lb. lean ground beef
 
2 Tbsp. cracked peppercorns
 
2 Tbsp. Tender Quick
 
1/4 tsp. garlic powder
 
1 cup water
 
1 Tbsp. liquid smoke

Directions

Mix 1 tablespoon peppercorns in meat.
Add remaining ingredients and mix well.
Divide into 3 parts and roll into 8-inch rolls.
Sprinkle with remaining peppercorns.
Wrap in wax paper, then again in foil.
Refrigerate for 48 hours.
Unwrap and bake for 2 hours at 300° on broiler pan for drainage.
Chill and slice into bite-size pieces and serve with cheese and crackers.
