Ingredients

 Green pepper4 Tablespoon, finley diced
 Cucumber4 Tablespoon, finley diced
 Celery4 Tablespoon, finley diced
 Red pimento - 2 tablespoons, finely diced
 Salami - 24 slices, large and thin
 Stuffed green olives - 1 cup, for garnish
 Dijon Mustard1/2 Teaspoon (For Dressing:)
 Lemon juice - few drops
 Olive oil1 Tablespoon (For Dressing:)
 Salt1 To taste (For Dressing:)
 Ground black pepper1 To taste (For Dressing:)

Directions

MAKING
1. In a small bowl, combine ingredients for dressing and whisk until well blended.
2. Add the vegetables to the dressing and mix well.
3. On a clean work surface arrange the salami slices.
4. Spoon a little of the salsa on one half of each slice.
5. Fold salami slices over the filling, in half and secure with small toothpicks.

SERVING
6. On a round serving platter, arrange the salami rolls in a ring
7. Heap the stuffed olives in the center of the ring
8. Serve immediately.
