Ingredients
| Green pepper | 4 Tablespoon, finley diced | |
| Cucumber | 4 Tablespoon, finley diced | |
| Celery | 4 Tablespoon, finley diced | |
| Red pimento - 2 tablespoons, finely diced | ||
| Salami - 24 slices, large and thin | ||
| Stuffed green olives - 1 cup, for garnish | ||
| Dijon Mustard | 1/2 Teaspoon (For Dressing:) | |
| Lemon juice - few drops | ||
| Olive oil | 1 Tablespoon (For Dressing:) | |
| Salt | 1 To taste (For Dressing:) | |
| Ground black pepper | 1 To taste (For Dressing:) | |
Directions
MAKING
1. In a small bowl, combine ingredients for dressing and whisk until well blended.
2. Add the vegetables to the dressing and mix well.
3. On a clean work surface arrange the salami slices.
4. Spoon a little of the salsa on one half of each slice.
5. Fold salami slices over the filling, in half and secure with small toothpicks.
SERVING
6. On a round serving platter, arrange the salami rolls in a ring
7. Heap the stuffed olives in the center of the ring
8. Serve immediately.
