Nicoise Salad Recipe
Saladenicoise is a french mixed vegetable salad recipe prepared with anchovy fillets. Dressed with oil and vinegar, the Saladenicoise is pepped up with mustard and flavored with garlic to taste.
Ingredients
| Small lettuce, separated into leaves 1 | ||
| Medium cold cooked potatoes, diced 6 | ||
| Cold cooked French beans, cut into lengths 275g/10oz | ||
| Tomatoes, blanched, peeled and quartered 6 | ||
| Garlic | 2 Clove (5gm), crushed | |
| Anchovy fillets, halved 6 | ||
| Black olives, stoned 10 | ||
| Capers | 2 | |
| Olive oil 50ml/2floz | ||
| Wine vinegar | 2 (DRESSING) | |
| French mustard | 1 Teaspoon (DRESSING) | |
Directions
Arrange the lettuce leaves in a large salad bowl.
Put the potatoes, beans, tomatoes and garlic into the centre of the bowl.
Combine all the ingredients for the dressing together, then pour over the vegetables.
Garnish with the anchovies, olives and capers.
