French Salad Nicoise Recipe
Ingredients
6 med. potatoes, boiled
1/2 c. finely chopped onion
1 tbsp. chopped fresh basil
3 tbsp. chopped parsley
1 tsp. salt
1/2 tsp. freshly ground pepper
3/4 c. olive oil
1/4 c. wine vinegar
3 ripe tomatoes, peeled and cut into sixths
1 can tuna in olive oil, broken into chunks
20 to 30 anchovy fillets
4 to 6 hard cooked eggs, peeled and sliced
Green pepper, cut into rings
Pitted black olive
Romaine or Bibb lettuce
Directions
Toss potatoes and onion with basil, parsley, salt, pepper, oil and vinegar.
Garnish with all remaining ingredients.
Serve with an oil and vinegar dressing, sprinkled with additional chopped parsley and basil.
