Salad Nicoise Recipe
Ingredients
| Green beans | 1/2 pound | |
| 1/2 pound red bliss potatoes | ||
| 2 hard-cooked eggs Iceberg lettuce, torn in large pieces | ||
| Tuna | 1 Can (10oz) | |
| Cherry tomatoes, or 1 large tomato, quartered | ||
| Artichoke hearts | ||
| Pitted black olives | ||
| Parmesan cheese, grated | ||
| Italian dressing | ||
Directions
Cut the green beans into 1 inch pieces; cook in a small amount of boiling salted water just until tender.
Cook the potatoes in simmering salted water for 20 minutes or until tender; cut into thick slices.
Arrange the green beans, potatoes, eggs, lettuce, tuna, tomatoes, artichoke hearts and olives on plates.
Sprinkle with Parmesan cheese.
Drizzle with Italian dressing just before serving.
