Ingredients
Dressing:
Olive Oil- 1/2 cup
Salad Oil- 1/4 cup
Red-Wine Vinegar- 1/4 cup
Sugar- 1 teaspoon
Salt- 3/4 teaspoon
Cracked Pepper- 1/4 teaspoon
Salad:
Fresh Green Beans- 1 lb., trimmed and washed or Frozen Whole Green Beans- 2 package (9-oz size), thawed, cooked
Red Onion- 1 medium, thinly sliced
Tomato- 2 medium, cut in wedges
Pitted Ripe Olives- 1/2 cup
Anchovy Fillets- 1 can (2 oz.)
Tuna- 2 cans (7-oz size), solid-pack, drained and
broken into chunks
Eggs- 2 hard-cooked, sliced
Directions
GETTING READY
1) In a jar with tight-fitting lid, place together oil, vinegar, sugar, salt, and pepper.
2) Put the lid tightly and shake vigorously until well combined.
MAKING
3) In a shallow dish place the drained beans.
4) Stream 1/2 cup of dressing and toss until beans are well coated.
5) Cover the dish and refrigerate the beans, until needed.
6) Place the remaining dressing and other salad ingredients in refrigerator until well chilled for at least 2 hours.
7) In a salad bowl, place the green beans and a few of onion slices, tomato wedges, olives, and anchovy fillets.
8) Toss the tomato mixture gently.
9) Place the tuna chunks and egg slices in the tomato mixture and toss again.
SERVING
10) Garnish with reserved onion, tomato, olives, and anchovy.
11) Dribble with remaining dressing over all and serve.
