Garlic Salad Nicoise Recipe
Ingredients
| Garlic | 1 Clove (5gm), halved | |
| 1 head Boston lettuce, trimmed, broken in bite-size pieces, and chilled | ||
| French dressing | 1/2 Cup (16 tbs) | |
| 2 cups cold diced cooked potatoes | ||
| 2 cups cold cooked cut green beans | ||
| Ripe olives | 1/2 Cup (16 tbs) | |
| 2 tomatoes, cored and cut in wedges | ||
| Anchovies | 1 Can (10oz), drained | |
| Capers | 1 Tablespoon | |
| Chervil | 1 Teaspoon, minced | |
| Tarragon | 1 Teaspoon, minced | |
Directions
Rub a salad bowl with garlic, add lettuce, 2-3 tablespoons dressing, and toss.
Mix 1/4 cup dressing with potatoes and beans, then pile on lettuce.
Garnish with olives, tomatoes, and anchovies, sprinkle with capers, herbs, and remaining salad dressing.
Do not toss.
