Simple Potato Salad Nicoise Recipe

| Hard-boiled eggs | 2 , hardboiled | |
| Plum tomatoes | 4 , quartered | |
| 1/4 cucumber, chopped into bite-sized pieces | ||

| 1 tbsp wholegrain mustard | ||
| Olive oil | 2 Tablespoon | |
| White wine vinegar | 1 Tablespoon | |
| Caster sugar | 1 Teaspoon | |

Directions
Cook the potatoes in boiling water until tender, adding the beans 5 minutes before the end of the cooking time.
Drain and refresh under cold, running water.
Drain well.
Arrange the lettuce pieces in a large salad bowl or serving dish.
Toss together the potatoes, beans, eggs, tomatoes, cucumber, and olives, and tip them over the lettuce in the bowl.
