Salade Le Trianon Recipe

Ingredients
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon lemon juice
Touch of crushed garlic, to taste
Freshly ground black pepper, to taste
2 coddled eggs
1/4 head crisp iceberg lettuce
1/2 bunch watercress, picked
1/2 head chicory, chopped finely
1 cup sliced raw white button mushrooms
2 ounces smoked salmon, cut into strips
Garnish:
Diced deep-fried croutons
Directions
Prepare a dressing of olive oil, vinegar, and lemon juice, seasoned to taste with crushed garlic and pepper.
Break and stir coddled eggs into the dressing while you prepare salad.
Wash and drain salad greens.
Break lettuce roughy and place in a bowl; add watercress, chicory, and mushrooms.
Pour salad dressing with the eggs over the greens and mushrooms, toss lightly, and correct seasoning if necessary.
Place on serving plates topped with smoked salmon.
Sprinkle with croutons.
