Salad Rolls Recipe
The salad rolls are filling and fresh rolls made with rice wrappers filled with vegetebles, chicken and noodles. The salad rolls are flavored with cilantro and mint and some cider vinegar.
Ingredients
| 2 oz thin rice vermicelli 60 g | ||
| 2 tbsp rice vinegar or cider vinegar25 mL | ||
| Cilantro | 2 Tablespoon, finely chopped | |
| 16 8 inch/20 cm rice paper wrappers16 | ||
| 16 small leaves leaf lettuce 16 | ||
| 1carrot, cut in 16 4-inch/10 cm matchstick pieces 1 | ||
| 1 stalk celery, cut in 16 4-inch/10 cm matchstick pieces 1 | ||
| 1/4 English cucumber, cut in strips1/4 | ||
| 1sweet red pepper, seeded and cut in strips 1 | ||
| 1/2 lb cooked chicken, cut in strips 250 g | ||
| 16 sprigs fresh mint or basil16 | ||
| 32 sprigs fresh cilantro or parsley 32 | ||
| 32 fresh chives or green onion slivers 32 | ||
Directions
Place noodles in large bowl and cover with hot tap water.
Allow to soak for 15 minutes.
Drain well.
Toss noodles with rice vinegar and chopped cilantro.
Soak rice paper wrappers in hot water for a few seconds until they soften.
Arrange in single layer on damp tea towels.
Fold down top third of wrappers.
Arrange piece of lettuce about one-third of way from bottom so it protrudes above flat top.
Arrange carrot, celery, cucumber, red pepper and chicken on top of lettuce, also protruding.
Add noodles.
Top with sprig of mint, 2 sprigs cilantro and 2 chives.
Fold up bottom third over filling.
Roll up wrappers tightly from either side.
Wrapper should stick to itself to seal.
