Salad Nicoise Recipe
Salad nicose is a heart salad that can be served as a side for an elaborate meal for lunch or dinner. Prepared with assorted vegetables tossed with olive oil and vinegar with lemon jice, salad nicose is topped with fish and eggs.
Ingredients
2 lettuce hearts
4 tomatoes, peeled, seeded and quartered
1/2 Spanish onion, peeled and thinly sliced
1 green pepper, seeded and cut into strips
8 small radishes
4 stalks celery, sliced
1 can tuna fish
8 anchovy fillets
2 hard boiled eggs 8 black olives
DRESSING
2 tablespoons white wine vinegar or lemon juice
6 tablespoons olive oil
few leaves fresh basil, chopped
Directions
Line a salad bowl with the lettuce.
Combine the vegetables and arrange in the salad bowl.
Combine the ingredients for the dressing, pour over the lettuce and vegetables, and toss lightly.
Drain the tuna fish, break it up into fairly large pieces and place them on top.
Top with the anchovy fillets and wedges of egg, and dot with olives.
