Salad Horiatika Recipe
Ingredients
| Tomatoes | 4 Large | |
| Cucumbers | 2 Medium | |
| Sweet onion | 1 Small | |
| 1/2 head iceberg lettuce or endive or chicory | ||
| 1 dozen Mediterranean style olives | ||
| Olive oil | 1/4 Cup (16 tbs) | |
| Red wine vinegar | 2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Dried oregano | 1/2 Teaspoon, crumbled | |
| Ground pepper | 1 To taste | |
| Feta cheese | 4 Ounce | |
| 1 tablespoon big capers | ||
Directions
Core tomatoes and cut into wedges.
Peel and halve the cucumber lengthwise, then slice.
Peel and slice the onion thinly.
Tear lettuce into bite sized pieces.
Place them in a salad bowl along with the olives.
Mix together the oil, vinegar, salt, oregano, and pepper.
Pour over the salad and toss.
Dice or crumble the cheese and scatter cheese and capers over the salad.
