11 lb. 1/4 oz. can pineapple chunks, drained
1 1 lb. can bean sprouts, drained
2 c. shredded lettuce, chilled
3/4 c. fresh orange sections or canned
Mandarin oranges
1/2 c. chopped cashews
1/3 c. mayonnaise
3/4 tsp. soy sauce
Directions
Drain pineapple, reserving syrup.
Marinate bean sprouts in pineapple syrup for 15 minutes; drain.
Toss together bean sprouts, pineapple chunks, lettuce, orange sections and cashews.
Combine mayonnaise and soy sauce.
Add to salad ingredients and toss gently to coat evenly.
