 White mushrooms3⁄4 Pound
 Canned baby beets/1 bunch new beets1 Pound, cooked until just tender, then peeled and sliced
 Greens/Favorite ones like watercress, lettuce, romaine, bibb lettuce)3
 Green onions5 , finely chopped
 Vinaigrette dressing1 Tablespoon

Directions

Wipe mushrooms with damp cloth and slice 1/4 inch thick.
Add beets and greens, broken in bite-size pieces.
Add green onions, then pour dressing over top and toss well.
