Ingredients

 White mushrooms 3/4 pound
 Baby beets1 Can (10oz), peeled
 Favorite greens (watercress, lettuce, romaine, Bibb lettuce)
 4 or 5 green onions, finely chopped
 Vinaigrette Dressing

Directions

Wipe mushrooms with damp cloth and slice 1/4 inch thick.
Add beets and greens, broken in bite-size pieces.
Add green onions, then pour dressing over top and toss well.
Makes 6 servings.
