Salad of arugula and Cherry Tomatoes Recipe
Ingredients
| Arugula - a small handful per person | ||
| Cherry tomatoes - 4 to 6 per person | ||
| CREAMY GORGONZOLA VINAIGRETTE | ||
| Dijon Mustard | 2 Tablespoon | |
| Tarragon vinegar - 1/3 cup | ||
| Olive oil | 2/3 Cup (16 tbs) | |
| Gorgonzola cheese | 1/3 Cup (16 tbs), crumbled | |
| Lemon juice | 1 Tablespoon | |
| Black pepper-freshly ground | ||
Directions
GETTING READY
1) Wash arugula carefully and pat dry.
2) Cut each tomato into two halves.
MAKING
3) In a large salad bowl,arange the arugula and the cherry tomatoes on it.
4) Mix together all the ingredients for the vinaigrette.
SERVING
5) Pour the dressing over the salad, toss well to combine and serve immediately.
