Salad Nicoise Recipe
This Salad Nicose makes my otherwise ordinary meal extraordinary ! This vast assortment of vegetables and fish takes a bit of effort, but given the taste and food worth, its not much ! Try out this beautiful Salad Nicose and let me know if you like it !
Ingredients
6-8 cups salad greens (2 or more kinds romaine, iceberg, Boston, bibb, etc.)
2 ribs celery (with leaves), diced
1 cut clove garlic
8 ounces canned drained tuna
4 hard-cooked eggs, quartered
2 cups cooked (pickled if possible) green beans
1 medium green pepper, cut in rings
1 medium red pepper, cut in strips
1/2 cup shredded roast pimentos
1 tablespoon chopped chives
4 medium (3-ounce) potatoes, boiled (optional)
1 recipe Parsley Vinaigrette Sauce (count 1 tablespoon oil per serving)
Directions
Wash lettuce and celery leaves, drain and dry quickly.
Wrap in clean towel and refrigerate until ready to use.
Rub 4 large salad bowls or deep plates with cut clove of garlic.
Divide equally into the bowls: shredded lettuce, torn into bite-size pieces, celery, tuna, eggs, green beans, green and red peppers and pimentos, potatoes (if you are using them) and sprinkling of chives. (All of this may be done in advance and refrigerated.)
Have everyone toss his own salad and dressing at the table.
