Salad Cheese Twist And Fruited Coffee Cake Recipe


Main Ingredient

 Salad oil1 Tablespoon
 Biscuit mix 3 1/2 Cup (16 tbs)
 Cheese And Onion Filling
 Fruit Filling
 Orange Butter Frosting


Basic DOUGH: Mix first four ingredients in a medium bowl and stir until yeast is dissolved, or let stand 10 minutes to dissolve.
Add half the biscuit mix and beat until smooth.
Stir in as much of the remaining biscuit mix as you can, then sprinkle remaining mix on a pastry board and knead it into the dough until smooth, about 1 or 2 minutes.
Cut in half and roll each piece into 9x6-inch rectangle.
PREPARING BREADS: On one rolled-out piece of dough, spread Cheese And Onion Filling to within 1/2 inch of the long edges.
Roll up like a jelly roll, seal edge with water, and pat to uniform thickness.
Place lengthwise on half a well-greased 15xl0-inch cooky sheet.
Cut 11 gashes with scissors, about 1/2 inch apart, on one side of the roll to make 12 sections.
Twist each section alternately, turning one to the right and one to the left.
Spread Fruit Filling on the remaining dough rectangle and roll up in the same way.
Transfer to the cooky sheet, and gash and twist as for Cheese Twist.
CHEESE AND ONION FILLING: Saute 1/2 cup chopped onion in 2 tablespoons oil until tender.
Set aside 2 tablespoons onion.
Mix 1/4 cup cheese spread, a pinch cayenne and 1/8 teaspoon salt with remaining onion.
Fruit FILLING: Cream 1 tablespoon soft butter with 1 teaspoon grated orange rind and spread on dough.
Then sprinkle with 1/4 cup each, brown sugar, chopped Maraschino cherries and raisins.
Rising and baking: Cover the breads with a dry tea towel and let rise about 40 minutes or until light and puffy.
Spoon remaining onions along centre of Cheese Twist, and decorate with diced pimento.
Bake the breads at 400F for 15 minutes, then reduce heat to 350F and bake 10 to 15 minutes longer.
Remove from oven, and brush the warm Cheese Twist with soft plain or garlic butter, and sprinkle with paprika.
Spread the warm Coffeecake with Orange Butter Frosting.
Orange butter frosting: Cream 1 tablespoon butter with 1/2 cup icing sugar and enough orange juice to bring it to a spready consistency.
