Sai Bhaji (Palak/Spinach) Recipe Video

Sai bhaji is Sindhi way of making spinach. Its a side dish perfect for lunch and dinner.

Ingredients

 
Spinach
 
Onion chopped
 
Garlic chopped
 
Ginger chopped
 
A pinch of asafoetida
 
Tomatoes diced
 
Egg plant diced
 
1/2 cup soaked split chickpeas
 
Oil
 
Salt
 
Turmeric

Directions

HEat oil in a pressure cooker.

Add a pinch of asafoetida, add ginger, garlic and onion. Stir fry them in oil.

Add half of the cut spinach and then add the split chickpeas. Add rest of the spinach.

Add tomatoes and green chillies.

Cover the cooker with the lid, do not seal.

When the tomatoes are cooked down a little add salt and turmeric.

Mix well.

Seal the cooker and cook under pressure.

When it is cooked, churn the bahaji with a hand churner.

Serve with roti or rice.
