Directions
Combine the stuffing mix with the boiling water and add the butter and milk.
Add salt and pepper to taste.
Combine the stuffing mixture with the potato and spread into a greased shallow ovenproof dish.
Make two hollows in the mixture and break an egg into each.
Arrange the tomato slices at each end and cook in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 15 to 20 minutes or until the eggs are cooked.
Serve immediately.
