1 pound baking potatoes (such as russet), peeled and cut into eighths
 
1 medium onion, cut into thin wedges
 
3 tablespoons olive oil or cooking oil
 
1 tablespoon snipped fresh sage or 1/2 teaspoon ground sage
 
1/8 to 1/4 teaspoon pepper
 
2 to 4 tablespoons buttermilk, plain yogurt, dairy sour cream, or milk

Directions

1 In a greased 2-quart casserole combine potatoes and onion. In a 1-cup measure combine 1/4 cup water, oil, sage, 1/2 teaspoon salt, and pepper; drizzle over potatoes and onion.
2 Bake, uncovered, in a 450° oven for 40 to 50 minutes or until the vegetables are tender, stirring twice.
3 Transfer to a medium mixing bowl. Mash with a potato masher or beat with an electric mixer on low speed. Gradually beat in enough buttermilk to make light and fluffy potatoes.
