No one can stop at just one is my claim for this recipe of Sabji Masala. Whenever I have Indian friends visiting, I always prepare Sabji Masala which is the most savored dish of their cuisine. You will make the right decision of preparing this Sabji Masala.

2 lb. mixed vegetables such as potatoes,
pumpkin, carrots, cabbage, cut into
small pieces
3 peeled and diced tomatoes
1 large onion sliced fine
2 cloves garlic crushed
1/4 tspn, cumin seed
1 tblspn, grated coconut
1 tspn, coriander seed pounded
1 tspn, borrie or turmeric powder
1/2 tspn, ground chillies
1 tspn, salt
6 chopped dried chillies

Pound the garlic and cumin seed and mix with rest of spices, grated coconut and a little water to make a curry paste.
Heat the butter, fry the paste 5 minutes.
Add the onions and fry until soft, then the tomatoes ' and stir and fry another 3 minutes.
Add the vegetables, stir again until all ingredients are well mixed.
Add stock or water to cover and simmer until vegetables are tender.
