Rutabaga Pudding Recipe
Rutabaga pudding is a vegetable pudding made with breadcrumbs and eggs. Prepared with fresh season's rutabagas, the rutabaga pudding is mashed and baked in the oven. Served with meats or vegetables even, it is filling and satisfying.
Ingredients
2 pounds rutabagas
2 tablespoons melted butter
1/2 cup fine dry bread crumbs
1 1/2 teaspoons salt
Big pinch of sugar
1/2 cup milk
2 eggs, well beaten
Directions
Peel rutabaga and cut in cubes, then cover with boiling water.
Place a lid on the pan and cook vegetable over moderate heat until tender when pierced with a fork.
Drain thoroughly.
Mash as smooth as possible or put through a ricer, then beat in all remaining ingredients.
Spoon into a 1 1/2 quart baking dish or casserole and bake in a preheated 350° oven for 1 hour.
