Ingredients
2 boiled lobsters
2/3 cup sliced mushrooms
3 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon dry mustard
Pinch of paprika
1 1/2 cups milk
1/4 cup finely grated cheese
3 tablespoons sherry
2 tablespoons finely grated cheese
Directions
Cut lobsters in half lengthwise.
Remove meat from body and claws; reserve body shells.
Cut meat into bite size chunks.
Saute mushrooms in 1 tablespoon butter.
Put remaining butter into top of a double boiler.
Stir in flour, salt, dry mustard, and paprika.
Add milk gradually, stirring until smooth.
Bring to boiling; cookstir until thickened.
Mix in 1/4 cup grated cheese, lobster, mushrooms, and sherry.
Heat over boiling water until piping hot.
Spoon into reserved lobster shells.
Sprinkle with remaining cheese.
Broil about 2 minutes, or until cheese is golden brown.
