Rustic Dijon Chicken With Tomato Pesto Recipe
Ingredients
1 tablespoon olive oil
1 teaspoon minced garlic
4 boneless skinless chicken breast halves (1 pound)
1 can (14 1/2 ounces) diced tomatoes or crushed tomatoes in puree, undrained
1 container (4 ounces) prepared pesto sauce
1 1/3 cups French Fried Onions, divided
2 tablespoons Honey Dijon Mustard Hot cooked noodles or pasta
Directions
Heat oil in 12-inch nonstick skillet over medium-high heat.
Add garlic; saute 30 seconds.
Add chicken; saute 5 minutes or until chicken is browned on both sides.
Add tomatoes with juice, pesto sauce, 1 cup French Fried Onions and mustard.
Reduce heat to medium-low.
Simmer 5 minutes or until chicken is no longer pink in center and sauce thickens slightly.
To serve, arrange chicken over hot cooked noodles or pasta.
Top with sauce and sprinkle with remaining onions.
