Russian Veal Chops With Brains Recipe
Ingredients
| Veal chops | 6 | |
| 1 pair calf s brains, precooked | ||
| Salt | 1/4 Teaspoon | |
| Nutritional yeast | 3 Tablespoon | |
| Wheat germ | 1/2 Cup (16 tbs) | |
| 1 onion, sliced and sauteed | ||
| Parsley | 3 Tablespoon, minced | |
| Whole wheat flour | 1 Tablespoon | |
| Sour cream | 3 Tablespoon | |
| 2 egg yolks, diluted with few tablespoons stock | ||
Directions
Broil chops briefly.
Arrange at bottom of large casserole.
Cover each chop with a slice of brain.
Blend salt, yeast and wheat germ together.
Dust tops of brains with mixture.
Cover and bake at 375° F. for 25 minutes.
Meanwhile, combine remaining ingredients in saucepan and cook over gentle heat.
When sauce is hot and slightly thick, pour over casserole.
Bake for an additional 15 minutes.
