Russian Tea Cakes Recipe
This Russian Tea Cake is so wonderfully delicious that it is hard to resist! Follow this simple recipe, and stock up on your own soft and spongy tea cakes!
Ingredients
Soft butter - 1 cup
Sifted confectioners' sugar - 1/2 cup
Vanilla - 1 teaspoon
Sifted flour - 2 1/4 cups
Salt - 1/4 teaspoon
Nuts - 3/4 cup, finely chopped
Confectioners' sugar
Directions
MAKING
1) Combine and cream the butter, sugar, and vanilla till smooth.
2) Sift together the flour and salt and stir into the butter mix.
3) Stir in the nuts and work till a soft dough.
4) Refrigerate.
5) Taking little at a time, shape into 1-inch balls.
6) Arrange about 2-inches apart on an ungreased baking sheet.
7) Place in the oven at 400°F. for about 10 to 12 minutes, till set but not browned.
8) While still warm, roll in confectioners' sugar.
9) Allow to cool.

10) Coat with sugar again, then serve.
