Russian Crepes Recipe
Ingredients
12 warm dessert crepes
3/4 cup cottage cheese
1/2 cup sugar
Pinch of cardamom
2 eggs, separated
1/4 teaspoon salt
1/3 cup candied cherries, chopped
4 egg whites
1/3 cup raisins
1/3 cup candied orange peel, chopped
1 tablespoon lemon peel
Directions
Drain the cottage cheese.
Mix with the sugar, egg yolks, cardamom, and salt until it resembles a thick paste.
Add all the fruit, including the lemon peel.
Whip the 6 egg whites to stiff peaks and fold into cheese mixture.
Divide the mixture between the crepes and roll up.
Place in oven proof dish and sprinkle a little sugar over the tops.
Place under broiler for 3 to 4 minutes to brown sugar and warm filling.
Serve immediately.
