Russian Lamb Kebabs Recipe
Ingredients
| 2 pounds boneless lamb, cut into 2-inch cubes | ||
| 1 large eggplant, peeled and cut into 2-inch chunks | ||
| Butter | 2 Tablespoon | |
| Tomatoes | 2 Large, sliced | |
| Ground pepper | 1 To taste | |
Directions
Preheat oven to 350° F.
Thread lamb and eggplant alternately onto 6-inch metal skewers.
Saute into melted butter until golden brown.
Place skewers in a shallow baking dish and cover with overlapping slices of tomato.
Sprinkle with freshly ground pepper and bake 30 minutes.
