Ingredients

 2 pounds boneless lamb, cut into 2-inch cubes
 1 large eggplant, peeled and cut into 2-inch chunks
 Butter2 Tablespoon
 Tomatoes2 Large, sliced
 Ground pepper1 To taste

Directions

Preheat oven to 350° F.
Thread lamb and eggplant alternately onto 6-inch metal skewers.
Saute into melted butter until golden brown.
Place skewers in a shallow baking dish and cover with overlapping slices of tomato.
Sprinkle with freshly ground pepper and bake 30 minutes.
