Ingredients

 4 cups thinly sliced green cabbage
 Beets1 1/2 Pound, shredded
 5 small carrots, peeled, cut lengthwise into halves, then cut into 1-inch pieces
 1 parsnip, peeled, cut lengthwise into halves, then cut into 1-inch pieces
 Onion1 Cup (16 tbs), chopped
 Garlic4 Clove (5gm), minced
 1 pound lean beef stew meat, cut into 1/2-inch cubes
 Diced tomatoes1 Can (10oz), undrained
 Beef broth3 Can (10oz)
 Lemon juice1/4 Cup (16 tbs)
 Sugar1 Tablespoon
 Black pepper1 Teaspoon

Directions

LAYER ingredients in slow cooker in the following order: cabbage, beets, carrots, parsnip, onion, garlic, beef, tomatoes with juice, broth, lemon juice, sugar and pepper.
Cover and cook on LOW 7 to 9 hours or until vegetables are crisp-tender.
Season with additional lemon juice and sugar, if desired.
Dollop with sour cream and garnish with parsley, if desired.
