Rump Steak In Oyster Sauce Recipe

Ingredients
4 oz. rump steak, cut in thin slices
2 thin slices fresh ginger
Salt, sugar and Ve-Tsin
1/4 teaspoon soy sauce
1 teaspoon cornflour
3 teaspoons cold water
1 tablespoon peanut oil
2 crushed cloves garlic
1/2 teaspoon ginger sherry
1/4 pint (U.S. 5/8 cup) hot chicken stock
1 dessertspoon oyster sauce

Directions
Place steak and ginger in a basin.
Add a pinch salt, sugar and Ve-Tsin, 1/2 teaspoon cornflour and 1 teaspoon water and work them well into the meat.
Heat the oil.
Fry the garlic in it until golden and then discard it.
Fry the meat in the oil for 1-2 minutes; then remove.
To the pan add the sherry, stock and another pinch salt, sugar and Ve-Tsin and bring to the boil.
Add the oyster sauce and the remaining cornflour, blended with the rest of the water, and boil for 1 1/2 minutes.
Return the meat to the pan and heat through for 1/2 minute.
Turn all into a heated serving dish and garnish with parsley.
