Ingredients
4 oz. rump steak
2 thin slices fresh ginger
Salt, sugar and Ve-Tsin
1 teaspoon cornflour
3 teaspoons water
1/2 teaspoon soy sauce
1 small cos lettuce
2 tablespoons peanut oil
1 crushed clove garlic
1/2 teaspoon ginger sherry
1/4 pint (U.S. 5/8 cup) hot chicken stock
Directions
Cut the steak and ginger into thin strips.
Place them in a basin.
Add a pinch salt, sugar and Ve-Tsin, 1/2 teaspoon cornflour, 1 teaspoon water and 1/4 teaspoon soy sauce; work them well into the meat and set aside.
Cut the lettuce across in 2-inch pieces.
Pour 1 tablespoon oil into the frying-pan and make it very hot.
Fry the lettuce in it for 1 minute, moving it about to coat it with the oil.
Lift it out.
Wipe out the pan.
Add the remaining oil and make it very hot.
Fry the garlic till pale gold and then discard it.
Add the steak, ginger and ginger sherry and fry quickly for 1-2 minutes.
Remove.
Add the stock, another pinch salt, sugar and Ve-Tsin and the remaining soy sauce and the rest of the cornflour, blended with the remaining water and boil for 1 1/2 minutes.
Finally, add the meat, ginger and lettuce and cook for a further minute.
