Rum Buttered Bananas Manicotti Recipe

1 tablespoon cornstarch
 
3/4 cup milk
 
1 cup firmly packed light brown sugar
 
1/4 cup light corn syrup
 
2 tablespoons butter
 
1 to 2 tablespoons rum
 
6 scoops vanilla ice cream, softened
 
6 Sweet Dessert Manicotti
 
3 small bananas
 
Whipped cream for topping

Directions

In a small saucepan, stir cornstarch into milk.
Add brown sugar and corn syrup.
Stir constantly over medium heat until thickened.
Remove from heat.
Stir in butter and rum; set aside.
Spread 1 scoop ice cream on one side of each Sweet Dessert Manicotti.
Peel and slice bananas in half lengthwise.
Place half a banana over ice cream.
Fold manicotti in half to cover banana and ice cream.
Pour warm sauce over filled manicotti.
Top with whipped cream.
Serve immediately.
Makes 6 servings.
