Rum Marinated Cantaloupe Recipe
Ingredients
| Sugar | 1/4 Cup (16 tbs) | |
| Lemon juice | 2 Tablespoon | |
| Rum | 2 Tablespoon | |
| 1 tablespoon lemon marmalade | ||
| 4 cups cantaloupe balls | ||
Directions
Combine sugar, lemon juice, and rum in a small saucepan; bring to a boil.
Reduce heat, and simmer 1 minute, stirring constantly.
Remove from heat, and add marmalade, stirring until marmalade melts.
Place melon balls in a medium bowl; add marmalade mixture, and toss gently.
Cover and refrigerate at least 4 hours.
Spoon melon balls evenly into 8 individual dessert bowls; drizzle evenly with marmalade mixture.
