Rum Glazed Boniatos Recipe
Ingredients
| 3 pounds boniatos, scrubbed | ||
| Melted butter | 3 Tablespoon | |
| Dark brown sugar | 3 Tablespoon | |
| 3 tablespoons dark spiced rum or light rum | ||
| Ground coriander | 1/4 Teaspoon | |
| Melted butter | 1 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Preheat oven to 350 degrees.
Grease shallow baking dish.
Bring boniatos to a boil in water to cover in large saucepan.
Cook for 15 to 20 minutes or just until tender; drain and cover with cold water.
Let stand until cool enough to handle.
Peel boniatos and slice 1/4 inch thick.
Arrange in overlapping layers in prepared dish.
Drizzle with 3 tablespoons butter; sprinkle with brown sugar, salt and pepper.
Bake, covered, for 20 minutes.
Increase oven temperature to 425 degrees.
Bake, uncovered, for 10 minutes.
Drizzle with mixture of rum, coriander and 1 tablespoon butter.
Bake for 5 minutes longer.
Serve hot.
