Royal Rum Bananas Recipe

Ingredients

 
3/4 c. flaked coconut 175 mL
 
3 Tbsp. butter 45 mL
 
1/2 c. brown sugar 125 mL
 
1 c. dark rum 250 mL
 
1/4 tsp. cinnamon 1 mL
 
6 firm bananas, peeled and sliced 6
 
1 L pkg. vanilla ice cream Papaya or strawberries 1 L pkg.

Directions

Toast the coconut in a large skillet and stir frequently to brown equally.
Remove from the heat and cool.
Add the butter, brown sugar, rum and cinnamon to the skillet and stir, heating until bubbly.
Add the sliced bananas and cook gently until the slices are just heated through.
Spoon the ice cream into serving dishes and top with the hot banana sauce.
Top with chopped papayas or strawberries if desired.
Sprinkle toasted coconut over top and serve at once.
