Ingredients

 
1.75 cups water
 
1 cup basmati rice
 
1 cinnamon stick
 
6 whole cloves
 
1/3 tsp saffron threads
 
1 tsp cardemon seeds (removed from pods)
 
3 Tbs raw cashews
 
3 Tbs currents
 
1.5 Tbs ghee
 
1 Tbs sugar

Directions

Bring water to a boil and add rice, whole cloves and cinnamon stick. Cover and lower heat. Meanwhile, dissolve saffron
threads in 1 Tbs boiling water. Let sit for 10 mins. Heat ghee in a small pan and briefly saute cashews and currents until cashews
are golden and currents are plump. Heat saffron water over low heat and add sugar and cardemon seeds. Stir to dissolve.
When rice is cooked, (about 20 mins.) lift lid and stir in saffron sugar water and cashews and currents. Stir and serve

This is very much like an Indian pulao..though saffron is usually not used in pulaos, rather they are used in biriyani.. so in that way its a cross and pretty unique :)
