Royal Icing Recipe
Ingredients
| Icing Sugar | 8 Ounce | |
| Egg whites - 1 or 2 | ||
| Lemon juice | 2 Teaspoon | |
Directions
MAKING
1. Take a mixing bowl and add sieve in icing sugar; add lemon juice if used.
2. In a small basin, lightly beat the egg whites.
3. Slowly, add the egg white into the bowl of icing sugar, mixing continuously with a wooden spoon. Add egg white and whisk until the icing will coat the back of the wooden spoon thickly. The consistency should be such that when a trail left behind by a spoon in the icing will just disappear when the bowl is shaken.
4. Very vigorously beat the icing to whiten it and make it glossy. Remove wooden spoon.
5. Wet a teatowel in cold water and wring out; fold it and cover the mixing bowl.
6. Keep bowl of icing aside in a cool place for 1 to 2 hours so that air bubbles can rise to the surface.
7. When about to use the icing, draw the back of a tablespoon carefully across the surface of the icing to break air bubbles.
SERVING
8. Use the Royal icing to coat your favorite pastries or cakes.
