Ingredients

Rolled sirloin roast - 1 4- to 5-pound, 4 inches in diameter

Garlic - 2 cloves

Salt and pepper

Directions

GETTING READY
1. Remove the small drip tray and place a pan that is at least as wide as the roast beef and about 2 inches deep.

MAKING
Wash the roast and then use the point of a sharp knife to poke several holes in the meat roll.
2. Cut garlic pods and stuff them individually into the slits that were in the meat surface.
3. Season with salt and pepper and set aside till required Skewer the meat and set it on the prongs in the rotisserie so that it does not touch the walls on either side. Cook roast beef according to directions of rotisserie manufacturer.
4. It will take about 1 to 5 hours for a piece of rare roast beef, although we suggest that you insert a meat thermometer in roast to judge the cooking time accurately. Remove the large drip tray 1/2 hour before the roast is finished cooking and replace with regular drip pan.

SERVING
5. Serve with Yorkshire puddings, sour cream and fresh salads.

TIP
This roast can be served with a Yorkshire pudding. Make the batter by combining 4 eggs, milk, plain flour, and salt. Pour the batter into the hot pan with the drippings from the roast beef. Cook in a hot oven (425° F.). Remove from oven when puffy and set, slide under roast beef in rotisserie and let the top brown during the last 10 minutes of cooking period.
