Rotini Con Zucchini Recipe

Ingredients

 
Oil 2 tbsp.
 
Butter 2 tbsp.
 
Onion, sliced thinly 1
 
Garlic clove, chopped 1
 
Prosciutto or ham, chopped 4 oz.
 
Zucchini 2
 
Chicken stock 1 cup
 
Salt 1/2 tsp.
 
Peppercorns, crushed 1/2 tsp.
 
Sugar 1/2 tsp.
 
Basil 1/2 tsp.
 
Chili peppers 1/2 tsp.
 
Rotini, cooked and drained 1 lb.
 
Parmesan cheese, grated 4 tbsp.

Directions

Heat oil and butter in a frying pan,and cook onion and garlic for 5 minutes.
Add ham and cook for 3 minutes more.
Slice zucchini and cut into match sticks, then add to pan and cook for 5-7 minutes.
Add stock and seasonings, and simmer for 10 minutes.
Toss with cooked pasta, and sprinkle with grated cheese before serving.
