Ingredients
6 (approximately 1 1/2 pounds each) Rock Cornish hens
Seasoned Stuffing
4 medium-sized cloves garlic, peeled and chopped
3 teaspoons salt
1 teaspoon pepper
4 tablespoons butter, softened to room temperature
Directions
Preheat oven to 350 degrees.
Wash the Rock Cornish game hens and pat dry.
Place 1/4 cup stuffing into each cavity.
Truss the hens.
Place remaining stuffing in a small baking dish and set aside.
Make a paste of the garlic, salt, and pepper.
Work in the butter.
Rub an equal portion of this mixture onto each of the birds.
Place the hens breast side down on a rack set in a shallow pan.
Roast for 30 minutes.
Turn the chicken breast side up.
Baste with the pan drippings.
Roast 20 minutes longer.
Baste again.
Raise the temperature to 400 degrees and cook about 10 minutes longer, until the hens are a dark golden brown.
Place the casserole of reserved stuffing into the oven for the last 5 to 10 minutes that the hens are roasting, to heat through.
